"Fig. 1 shows the structures of (6-gingerol) and (6-shogaol). Homologs of both gingerol and shogaol exist, and in the case of gingerol, these include 6-gingerol, 8-gingerol and 10-gingerol, with 6-gingerol the most abundant found in ginger. Gingerol is converted to shogaol during the dehydration reaction caused by heating, but the content levels of these constituents vary depending on the type of ginger. 圖 1 為 6-薑醇 (6-gingerol) 及 6-薑酚 (6-shogaol) 的結構。薑醇 (gingerol) 及薑酚 (shogaol) 的同源物皆存在,就薑醇而言,包括 6-薑醇、8-薑醇、10-薑醇,而其中 6-薑醇的含量最高。在加熱造成脫水反應的過程中,薑醇會轉化為薑酚,但這些成分的含量隨著薑的種類而不同。"
